Domestication. Plants that were gathered in the wild could be grown under cultivation and a food source provided. Animals were tamed and bred for work and food. Cities could develop and grow with constant food sources instead of the people being nomads following wild herds of animals around the countryside.

In terms of the first people to do it, it was called the Agrarian Revolution and it began about 12000 years ago in the middle east.
